Classic Verde Chicken Soup

Cook time: 20 minutes

Total time: 30 minutes

Ingredients:

  • one whole cooked chicken shredded or 1.5 lbs chicken

  • 2 celery stalks

  • 2 carrots

  • 1 jar salsa verde

  • 4 cups bone broth

  • 2 potatoes, cubed

  • 3 limes, juiced

  • 1/4 cup chopped cilantro

  • mineral salt + pepper

Directions:

  • Boil chicken with apple cider vinegar + mineral salt until internal temperature is 165 F.

  • Strain broth and shred chicken.

  • In a large pot add the chicken, potatoes, lime, cilantro, salsa and broth.

  • Simmer for 20 minutes, until potatoes are fork soft


Pair with guacamole, tortilla chips or quesadilla.
