Ingredients:
one whole cooked chicken shredded or 1.5 lbs chicken
2 celery stalks
2 carrots
1 jar salsa verde
4 cups bone broth
2 potatoes, cubed
3 limes, juiced
1/4 cup chopped cilantro
mineral salt + pepper
Directions:
Boil chicken with apple cider vinegar + mineral salt until internal temperature is 165 F.
Strain broth and shred chicken.
In a large pot add the chicken, potatoes, lime, cilantro, salsa and broth.
Simmer for 20 minutes, until potatoes are fork soft
Pair with guacamole, tortilla chips or quesadilla.
